Trader Joe’s Pumpkin Sticky Toffee Cakes featuring mini bundt cakes made with pumpkin, dates, and brown sugar covered in a sticky toffee sauce.

Each cake comes in a microwave-safe plastic mold that you turn onto a plate after heating. It came out of the mold very easily with a nice even layer of sticky fudge sauce covering the cake.
The fudge sauce offered a brown sugar caramel flavor and a hint of sweetness. It was a nice smooth consistency that was sticky enough for the cake to hold while being thin as a frosting.
The cake was so moist that it almost staggered to the point of being wet, but never tipped over. The pumpkin and dates seemed to help retain the moisture better than regular cake.
Flavor-wise, the cake was rich with a smooth pumpkin base, a medium dose of autumn spice (mostly cinnamon with hints of ginger and cloves), and a surprising yet enjoyable citrus note of lemon zest.
Overall, Trader Joe’s Pumpkin Sticky Toffee Cakes were great. The cake texture was very tasty and the taste was indulgent and sweet with a bit of complexity without becoming overly busy. The box recommended trying it with whipped cream or vanilla ice cream, so I tried a little with whipped cream and it worked well. The whipped cream suppressed some of the sweeter notes and added a rounded creaminess.
